Great tasting macaroni!


◦ Half a stick of butter. Sautéed until molten on high/gas 6 in 1 of 2 saucepans.

◦ 2 tablespoons or 100g of flour. Make a roux and stir on high until gloopy.

◦ Pour in 300 ml semi skimmed milk and stir. Still on high, turn down now (5 minutes in to making the sauce) to gas 2 and simmer on low heat for 10 minutes.

◦ Tip a pound or otherwise 500g of macaroni shells in to a 1 litre saucepan (in to the second saucepan).

◦ Boil kettle of water to reduce cooking time (important step).

◦ Raise temperature of pasta to steaming slightly but turn down to gas 2.

◦ Don’t blanch pasta.

◦ Stir sauce to avoid clotting and clumping.

◦ Add a palm full of table salt, a palm full of herbs, and grind some peppercorns to season for taste.

◦ Simmer both for 5 minutes (wash dishes for serving in that time).

◦ Add sauce to water and pan and simmer on has 2/low for 10 minutes or until it thickens stirring occasionally.

◦ Allow to cool.

◦ Serve.


Snacks’ Chicken nuggets recipe


◦ 1 x handful herbs

◦ 1 x handful of salt

◦ Ground pepper from a grinder

◦ 650g chicken breast (cubed and processed)

◦ Half a coffee cup of vegetable oil

◦ 3x 7g of icing sugar


◦ Blend


◦ Warm some more oil on gas 4/medium heat


◦ Lay out 250g plain flour (no batter recipe) in a cake tin, mixing bowl or baking dish


◦ Use 2 tablespoons to fashion coins out of the chicken pulp until you’ve made 9 nuggets


◦ Store the rest of the pulp


◦ Coat nuggets in flour individually and place in shallow oil to pan fry in a skillet until golden colour


◦ Flip


◦ Coat second time liberally


◦ Pan fry both sides


◦ And finally remove from skillet when golden on to a baking tray to cool and dry off.


◦ Should take 50 minutes to prepare 9 nuggets, cooking time is around 10 minutes per side both before and after coating with flour.


Serve with condiments!

Spaghetti


◦ 1x palm of: salt

◦ 1x palm of: pepper

◦ 1x palm of: herbs

◦ 1x palm of: Cajun spices

◦ 1 litre saucepan

◦ Boiled water

◦ Spaghetti broken in to thirds

◦ Chicken fat or stock

◦ butter


1. Sauté butter until molten.

2. Add chicken fat or stock.

3. Add water from boiled kettle.

4. Add herbs, spices and seasonings.

5. Simmer with pasta in boiled water for 30 minutes of gas 2 (electric oven).

6. Drain sauce in to a soup dish.

7. Serve spaghetti with bay leaf or cheese.
